A client of mine recently went fishing in St. Jean’s. If you never been there, it looks pretty awesome. With a quick google search you’ll be impressed.

Now I’ve eating lots of salmon, but this fresh salmon tastes way better than fish farm store-bought. They also told me of their favorite sauce they used. It was too good not to share.

What I did first was season the Salmon with Salmonthe salt and pepper. I use the fresh pepper corn and Himalayan rock salt.

Of course I cut the tail off.

I heated up a frying pan on medium heat and added olive oil.

I cut the salmon in 3 pieces and left the skin on.

Next I added the salmon to the frying pan for about 3 minutes. You will notice it will develop a brown crust.

In the meantime, I turned on the oven to 450 degrees F and put a pan I use for pizza in to heat up.

Starting to look yummy eh? My cat and dog were going crazy over the smell.

After searing it, and when the stove was preheated. I very carefully transferred the fillets to the pan I had heating up in the oven. Make sure you use oven mitts.

Once in the oven I started the timer for 10 minutes. These fillets were pretty thick so judge your time accordingly.

In a bowl I mixed all together 1/3 cup of olive oil mayonnaise, 1/3 cup of sour cream, I diced up dill to taste. ( I love dill so I diced a lot) 2 TSP of horseradish, a few squirts of fresh lemon juice, (I squeezed about a 1/4 of a chopped lemon) 1/4 TSP of garlic powder, and finally I added some more of that salt and pepper.

Once all mixed together I spoon poured it on the salmon and added  more dill for the picture. Like I said earlier, I love dill so the extra was also consumed.

I could have added some fancy side dishes for the picture but I wasn’t sure how it would taste as it was my first time making it. BUT IT WAS DELICIOUS!!
